Ingredients
- 3 chopped spring onions
- 1 large Broccoli head and stalk
- 1 litre of stock – whatever kind you are into
- 1 avocado
- Drizzle of olive oil
- Salt & pepper
- A squeeze of lime or lemon
- Hand full of Coriander – optional

Method:
- Fry the onion, then add the broccoli and stock
- Boil until soft. Blend with stab mixer
- Chop the avocado and place in a bowl with seasoning.
Cover in lime and oil - Pour on the blended broccoli soup
